Heat oven to 180°C/ 160°C fan oven / 350°F/Gas Mark 4
Grease and line 2 lb loaf tin
Beat together with a wooden spoon or mix with an electric whisk
- 105 g soft butter
- 2 medium eggs
- stir in 190 g grated carrot
Add contents of jar and stir
Tip mixture into loaf tin
Bake 50 – 55 mins or until skewer comes out clean
Cool in tin before placing on wire rack
Makes approx. 20 pieces
